(ORDO NEWS) — The content of protein and omega-3 fatty acids in the created fillet is the same as in a real salmon fillet.
Toronto-based New School Foods has unveiled a plant-based salmon substitute that mimics grilled fillets.
According to the company’s website, New School Foods plant-based salmon is strikingly similar to real salmon, both raw and cooked, and contains the same amount of protein and omega-3 fatty acids.
New School Foods CEO Christopher Bryson told TechCrunch that while looking for research to invest in, he found very little focus on seafood.
Bryson observed that high moisture extrusion is often used in other plant-based meat products. He found that cooking over high heat did not produce the desired texture and muscle fibers.
“So we decided to create a new technology that doesn’t require high moisture extrusion and is better suited to whole pieces,” he said.
As a result, scientists have developed unique muscle fibers and a scaffold platform.
This allows whole-piece meat substitutes to be produced with the same colors, aromas, lipids, texture and taste as traditional fish. Of course, the specifics of the technology are not disclosed.
New School Foods plant-based salmon fillets have a familiar look and feel due to their completely cold cooking, which sets them apart from many other plant-based meats.
The company emphasized that its technology is now at a stage where it can already be demonstrated.
