(ORDO NEWS) — A new study shows that packaging affects taste – cartons do not keep milk fresher than glass and plastic containers.
Researchers report that milk is more susceptible to flavor changes due to packaging than other beverages due to its mild and delicate taste.
In addition to slight oxidation, “the taste of milk can be affected by the metabolism of the substances contained in the package with milk and the absorption of food flavors and flavors from the surrounding refrigeration environment by the package.”
The researchers tested pasteurized whole and skimmed milk stored in a variety of containers: cartons, plastic bottles, plastic bags and glass.
Samples were tested on the day of the first treatment, then again 5, 10 and 15 days after that.
The scientists ran tests for oxidation and volatile compounds, and on day 10, the samples underwent a blind consumer taste test to see if tasters could distinguish milk from different containers.
The results showed that the type of packaging does affect the taste of milk, and skimmed milk is more susceptible to flavor effects than whole milk.
Of the different types of packaging, cardboard boxes and a plastic bag retained the freshness of milk the least.
Milk packaged in cartons actually had a distinct off-taste as well as the presence of carton compounds.
The final results show that while glass remains the ideal container for preserving the flavor of milk, plastic bottles provide the added benefit of keeping fresh when not exposed to light.
